A much more deeply toasted form of pale malt, beyond amber malt. Intense flavor, aroma and color. Adds a biscuit-like flavor and aroma. May also impart some bitterness which requires longer aging to mature and mellow. Roasts of fermentable grains, such as amber & brown malts, have virtually disappeared from modern commercial malting and brewing.
