These grains simply don't fall nicely into the other sub-categories. They may be a result of special processing (e.g. German Rauch (smoked), British Peat Smoked, German Acidulated (sour, acidic) malt, grains heated to the point of "popping" (torrified wheat), or simply cured to levels that don't neatly fit into the crystal malt/roast grain niches (e.g. amber malt, brown malt, Victory, Aromatic, Biscuit malts).

Belgian Aromatic (23° - 28°) per lb. $1.79 Similar to Melanodian malt, but slightly lighter in color, sweeter and more aromatic (hence its name) in the finish. Product Details	Belgian Biscuit (23° - 33°) per lb. $1.99 A marginally fermentable grain that should be used in place of "toasted" malt in many recipes. Biscuit malt produces a very pronounced "toasty" finish in the beer. Product Details
British Amber (20°) per lb. $1.99 A more deeply toasted form of pale malt. Intense flavor, aroma and color. May impart some bitterness which requires longer aging to mature and mellow. Domestic Victory Malt (28°) per lb. $1.99 It adds smooth, complex flavor and aroma to any beer style when used at low percentages. Product Details	Domestic Special Roast Malt (50°) per lb. $1.99 With its characteristic and bold sourdough flavor, it will contribute an exciting layer of flavor to Nut Brown Ales, Porters and other dark beer styles. German Rauch (smoked) Malt (3°) per lb. $1.79 Base malt that has been dried with smoke. Imparts a smokey flavor. Product Details	German Oak-Smoked Wheat Malt (3°) per lb. $1.79 Base wheat malt that has been dried with oak smoke. Imparts a smokey flavor. Very distinctive! Product Details
British Peat Smoked Malt (2.8°) per lb. $1.99 British pale malt cured with peat. Directly dried with peat smoke to provide a scotch whiskey flavor. Product Details	Domestic Cherry-Wood Smoked Malt (3°) per lb. $2.49 Base malt that has been dried with cherry wood smoke. Imparts a smokey, somewhat sweet flavor. Product Details
German Melanoidin Malt (25°) per lb. $1.99 toasty & sweet Product Details	German Acidulated Malt (2°) per lb. $1.99 Sometimes called sour malt. This is a type of malted barley that has allowed to naturally sour. Often used to lower PH in mash. Product Details
Torrified Wheat (2°) per lb. $1.79 Unmalted wheat that has been heated to a point where it pops like pop corn. Subtle toasty finish, popular grain for British ales.
